Fifth Dimension Chocolates

Russell from Fifth Dimension Chocolates is the first chocolatier to use as a selling portal for his unique chocolates.  He is not afraid to try new things, and this certainly shows in the creativity of his chocolates.  He was so kind to tell us a bit more about himself and his passion for chocolate in this feature.

 I am from Leeds. The Company Fifth Dimension Chocolates is based in North West London, where I currently reside.

1)      Where does your passion for chocolate come from?

My chocolate journey began in 2006 when I was given Chloe Doutre-Roussel’s book “The Chocolate Conoisseur” – it opened my eyes and introduced me to the world of fine quality chocolates. Before that I had always wondered why some people were prepared to pay more for some chocolates when I could get the same quantity for a fraction of the price from supermarket shelves. The book instantly converted me and I finally understood the difference between bulk/commodity cacao and fine flavour cacao, and why some spent more on the latter.

Since then I have taught myself how to make chocolates and experiment with different ingredients and flavours as a hobby. There’s nothing more satisfying than seeing friends’ happy faces when they received my handmade chocolates and sampled them. Over the years, many friends suggested that I should sell the chocolates, and so in 2013 when I decided to give up the job in the media, the next natural step for me is to become a chocolatier.

For my chocolates, some are ones you may expect, others may be a surprise, but each one is all part of a sensory adventure. I want everyone to join me on my journey and enjoy it as much as I have. Welcome on board!

2)      What makes your chocolates unique?

I have a passion for flavour and working with different flavours and chocolate. Some of our flavours may seem a little different, however, we have tried and tested the flavours to ensure the end result is a delight. For example our Soy Caramel (Hong Kong) chocolate is a unique chocolate using Soya sauce, inspired by our experiences in China. This has just won an Academy of Chocolate Silver award in 2016. It's not just about different flavours though, all our chocolates, with the exception of the milk chocolate from Ghana, are from Fine Flavour (Fino de Aroma) Cacao - this is a denomination from the International Cocoa Organization (ICCO)* classification. Only around 8% of the cocoa produced in the world is Cacao Fino de Aroma, which has an exquisite aroma and flavour profile. The fine flavour cacao that we use are Trinitario (from Colombia, Grenada and Madagascar) and Criollo (from Bolivia). The cacao from Ghana is a blend of Trinitario and Forestaro.
